History of Tea
Legend has it that the mythical emperor of Ancient China, Shen Nong, first discovered tea when a Camellia Sinensis leaf fell from a tree overhead perfectly into his cup of hot water. He continued on to taste the new concoction and found it refreshing and delightful!
Tea has been a part of Asian culture for as far back as the Tang dynasty (618 AD), being pressed into tea cakes for preservation during long travels. Today, tea is still enjoyed around the world for its pleasant taste, balanced energy, and incredible health benefits.
Tea Talk
All tea made from the Camellia sinensis plant have a health-promoting antioxidant compound called Epigallocatechin Gallate (EGCG) which has been shown in studies to be beneficial for our cardiovascular system, brain health, and longevity.
We will be sampling a few teas in the different stages of fermentation with varying degrees of caffeination. The picture below shows the levels of oxidation used to process particular types of tea.
